About Midnight Combine Barrel-Aged Belgian-Style Dark Strong Ale

This beer is not for everyone. Depending on its age and how it was cellared, Midnight Combine features a wide range of intense funky flavours from both Belgian and wild yeasts, high-alcohol, woody oak character from barrel aging, and the raisin-like hallmarks of Belgian-style adjunct brewing from the use of special B malts, candi syrups and molasses. Brewed as an homage to prairie farmers who toil every year to bring us the grains used in brewing, Midnight Combine is an annual barrel-aged masterpiece from Prairie Dog Brewing. Each year, we meticulously craft this Belgian-style dark strong ale through a unique solera-style aging process, blending diverse barrels, some fermented exclusively with Brettanomyces yeast strains, and incorporating portions from prior years’ blends. This fusion creates a beer of extreme complexity, revealing sometimes intense wild, funky flavors that round out with aging, along with notes of chocolate, licorice spice, wine-like acidity, oak, molasses, and dark and stone fruits. The dance of caramel, toffee, and subtle burned sugar captivates the palate.

Available in 750mL bottles (except for the 2019 edition, which comes in a 500mL bottle), every vessel is meticulously hand-filled, labeled, numbered and sealed with a cork and cage closure. This meticulous process reflects our commitment to excellence in every bottle. This bottle-conditioned beer will develop nicely in a cool cellar over a few years, or put it in a fridge to lock in flavours and further extend bottle life.

As part of our annual release program, Midnight Combine stands as a testament to our dedication to evolving and refining our craft. Every year’s release is a different blend and showcases something unique about the ingredients and/or process that we use to craft this beer. Each bottle is not just a beer; it’s a journey through time and flavors. Limited in availability, these barrel releases are the pinnacle of Prairie Dog Brewing’s craftsmanship.
