Our large brewpub has 30-40 team members, depending on the season, which is just too much for us to list here all at once as we launch this new website. We’ll gradually expand this page to include more of our team, but for now we’ll just focus on restaurant leadership!

BBQ Pitmaster: Dalton Barrett

Meet Dalton Barrett, our talented Pitmaster and a proud Calgary native. With over 14 years of experience in the art of BBQ, Dalton brings his expertise to every smoked dish we serve. A Red Seal Journeyman Cook, he honed his craft at local icons like Bookers BBQ and Palomino Smokehouse before expanding his knowledge at Nashville’s Backyard Pitmasters BBQ Classes. Dalton’s passion lies in exploring the endless possibilities of cooking with meat, crafting flavors that wow our guests. When he’s not perfecting recipes or ensuring the quality of our smoked products, you’ll find him gaming on Call of Duty, creating sauces, or sneaking in an afternoon nap. We’re thrilled to have his skills and dedication on our team!

Front of House Mgr: Aidan Hill

Aidan joined Prairie Dog Brewing in 2023 as an all-rounder and quickly proved himself, becoming an adept supervisor after a few months, and eventually taking on a role as Front of House Manager, where he excels at organization, inventory management, training and communication with our team. Aidan is recognizable based on his glasses, strawberry blonde hair and a notebook that he almost always carries with him.

In his spare time, Aidan loves to hike in the rockies, and he’s a huge movie buff, having gone through film school in the past. He’s also a big reader with a big heart.

Restaurant Ops Manager: Pascal Mckillcan

Pascal recently joined Prairie Dog Brewing as our dedicated Restaurant Operations Manager, bringing over 15 years of experience from some of Banff’s most prestigious restaurants, including Saltlik, The Maple Leaf, and Park Distillery. A Red Seal Journeyman Cook, Pascal has spent his career excelling in busy kitchens with a strong focus on exceptional service and food quality. His passion for building and empowering teams is at the heart of his leadership style, fostering growth and engagement without relying on fear tactics—a refreshing approach in the industry. Outside of work, Pascal is a proud father who loves cooking for his family, traveling to Asia, and supporting his wife in her entrepreneurial pursuits. We’re thrilled to have Pascal’s expertise and vision helping us elevate our guest experience every day!

Prairie Dog Brewing Co-Founder and President Gerad Coles

Restaurant GM: Gerad Coles

Gerad is a Senior Officer, owner and co-founder at Prairie Dog Brewing, and he oversees the totality of our operations, including our restaurant. At the restaurant level, Gerad acts as our GM and mentors restaurant managers regarding HR matters, sets goals and provides budgetary constraints and reporting, and drives many projects and improvements to operations and facilities. Gerad also manages our Allergy Codex with our kitchen team, and administers this website.

Restaurant Asst. GM: Laura Coles

Laura is a Senior Officer, owner and co-founder of Prairie Dog Brewing, and she is substantially involved in our day-to-day restaurant operations, whether it be through booking events, mentoring team members, handling guest feedback, and implementing operational changes to improve the guest/staff experience and safety. Laura leads our Health and Safety committee, and also heads up all efforts at Marketing and Public Relations, including being the most public face of our business in the media, at festivals, and more.
